Food Safety Management System

ISO 22000 describes the requirements of a food-safety management system through the implementation of pre-requirements programs and the HACCP methodology. It addresses the identification, analysis, and control of physical, chemical, biological, and radiological hazards, to guarantee that food products are safe for human consumption.


This standard is applicable to all organizations, the operations of which—regardless of their size—have to do with the food industry and are part of the food chain.


ISO 22000 standard is applicable in organizations, no matter the size, place in the food chain, that would like to implement systems that produce harmless products.

The means to fulfill the requirements of this international standard by using internal or external resources, therefore each point of the standard shall be implemented, starting with:

To complete the necessary requirements to obtain the certification in ISO 22000, it is also necessary to implement prerequisite programs to ensure a hygiene environment during the food production, these are chosen by the organization in relation to their process needs. Therefore, the organization shall take as reference: the NOM-251, technical specification of ISO/TS 22002-1 in food production or the ISO/TS 22002-4 in producing food packaging.

The prerequisite programs are the fundamental basis for the successful implementation of a management system of food safety.

To obtain a certification in ISO 22000, you shall ensure as minimum:

  • To keep a documented system according to the standard.
  • To define the certification scope.
  • To keep evidence of the system implementation, we recommend at list 3 months. Documents like registries related to the documents control, control registry, corrective actions, management of the non-conforming products, internal audits, management reviews, among others.
  • To have internal auditors that have competence in ISO 22000 audits.
  • To have a food safety policy, besides communication and organization awareness, as well as to define objectives associated with the product harmless.
