ISO 22000 describes the requirements of a food-safety management system through the implementation of pre-requirements programs and the HACCP methodology. It addresses the identification, analysis, and control of physical, chemical, biological, and radiological hazards, to guarantee that food products are safe for human consumption.

To complete the necessary requirements to obtain the certification in ISO 22000, it is also necessary to implement prerequisite programs to ensure a hygiene environment during the food production, these are chosen by the organization in relation to their process needs. Therefore, the organization shall take as reference: the NOM-251, technical specification of ISO/TS 22002-1 in food production or the ISO/TS 22002-4 in producing food packaging.
